  • Flavor cost $0.074/serving is GramZero's All Natural case ($47.60), the clean-label line — the conventional line is $44.00 and runs about $0.069. One quarter-teaspoon layer = one serving.
  • Rent is now a real number, not a guess. The Market Shops preset uses 1,200 sf at $35/sf — derived from what Jason actually pays on units 24+25 ($3,000–4,000/mo). For comparison, live asking rates pulled 28 Jul 2026: Baytowne Wharf $60/sf, Inlet Beach ~$63/sf, US-98 Santa Rosa Beach $35/sf.
  • Why 60% local at this site. An Ascension Sacred Heart primary care clinic sits in the same center, Sandestin staff and residents pass the gate daily, and Hwy 98 carries the rest. Medical and service staff are the daily-repeat base this category actually runs on — that is what holds January up.
  • Labor flexes with season but never below a floor — you still staff open-to-close in January. That floor is what makes or breaks the winter months.
